Chicken and Cheese Lettuce Wraps Serves 1 – 4 mini lettuce wraps 2 slices nitrate free oven roasted chicken breast, cut into strips 1 oz Allegro 4% jalapeno cheese, cut into strips 2 large romaine lettuce leaf, cut into stripsRoll strips on chicken breast around cheese. Then roll the chicken and cheese into the lettuce leaf. You should have 4 lettuce wraps. Oven Roasted Chickpeas Serves 4 1 (12 ounce) can chickpeas, rinsed and drained 2 tbsp olive oil salt and pepper to taste sprinkle of cayenne pepper sprinkle of garlic powder
Preheat oven to 450F. Dry chickpeas with a paper towel. In a bowl, combine all ingredients and any additional spices you like. Spread on a baking sheet. Bake for 30 – 40 minute until brown. Watch carefully to ensure the chickpeas do not burn. Red Pepper Egg Salad Serves 1 1 whole hard boiled egg + 3 hard boiled whites (yolks removed) 1 tbsp low fat mayo 2 stalks celery, finely chopped 1 red pepper, cut into thick strips 1 tsp onion powder salt and pepper to taste 2 Ryvita crackers In a mixing bowl, chop whole egg with whites. Stir in the mayo, vegetables and seasonings. Mix until combine. Spoon the egg mixture onto eat piece of red pepper. Kefir Berry Shake Serves 1 1 cup mixed berries 1 handful of raw spinach 1/2 cup kefir 1 scoop protein powder 1.5 cups water 1/2 tsp cinnamon Pour all ingredients into a blender and blend on high until smooth. Add ice if desired. The egg muffins are in a different recipe. Feel free to alter any of the fruits or vegetables for ones you prefer. Remember, snacks are important!
